
Sauteed Green Beans Recipe

In a pot of boiling, salted water, blanch the green beans until crisp-tender, 1 to 2 minutes. Remove and plunge into a bowl of cold water to stop the cooking and set the color.
In a large saute pan, melt the butter. Add the garlic and shallot and saute, stirring frequently, until translucent, 3 to 4 minutes. Add the green beans and saute until heated through. Finish with the parsley and lemon zest. Season with salt. Serve immediately.
