French Green Beans Over Lemon Ricotta Recipe

- Kosher salt and freshly ground black pepper
- 1 pound French green beans
- 1 cup whole milk ricotta
- Juice and zest of 1/2 large lemon, plus 1 lemon wedge for serving
- 2 tablespoons unsalted butter
- 1 large shallot, minced
- 2 cloves garlic, minced
In a large pot of boiling water, add a generous amount of salt and the green beans. Cook until the beans are crisp tender, 4 to 6 minutes. Drain and add the beans to a large bowl of water and ice to stop the cooking. Let cool completely and then drain and pat dry with a paper towel.
In a medium bowl, mix the ricotta with the lemon zest and juice and season with salt.
Heat a large skillet with the butter over medium heat. Once the butter is melted, add the shallot and garlic and saute until fragrant, stirring frequently, about 3 minutes. Add the green beans, season with salt and pepper and toss to coat.
Smear the ricotta mixture on the bottom of a serving dish or platter, then top with the green beans and finish with a squeeze of juice from the lemon wedge.
