Mouthwatering Southern Chicken and Biscuits Casserole

Ingredients:
  • 2 tsp. olive oil
  • 1 medium onion, chopped
  • 1/2 cups all-purpose flour
  • 2 tsp. fresh basil
  • 2 tsp. fresh thyme
  • 1/2 tsp. kosher salt + more to taste
  • 1/4 tsp. fresh ground black pepper + more to taste
  • 3 1/2 cups whole milk
  • 1 1/2 tbsp. Worcestershire sauce
  • 1 bay leaf
  • 1/2 cup diced carrots
  • 1/2 cup diced turnips
  • 1/2 cup green beans
  • 1/2 cup corn kernels = 1 corn on the cob
  • 1/2 cup frozen peas
  • 1 cup cabbage, shredded
  • 4 garlic cloves, fine chopped
  • 2 1/2 cups cooked chicken, cubed
  • 3 tbsp. parmesan cheese


Biscuit Ingredients:
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tbsp. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 1/2 cup whole milk
  • 4 tbsp. olive oil
  • 1 tbsp. fresh parsley, minced
  • 1 tbsp. fresh chives, minced


Steps:
1. In a large skillet, heat oil over medium high heat. Add the onion and cook until tender. Stir in the flour, basil, and thyme, kosher salt and fresh ground black pepper. Add bay leaf. Gradually stir in whole milk and Worcestershire sauce until mixed well and smooth.

2. In a separate skillet, heat oil over medium high heat; then, add the carrots, turnips and cook for 2 minutes. Add green beans, corn and garlic and sauté another 2 minutes. Add frozen peas and cabbage and continue to cook for another 2 minutes. Add milk mixture and bring to a boil and cook until sauce has thickened and vegetables are tender.

3. Add chicken, and cheese and reduce to low.

4. Meanwhile, in a medium bowl, combine the dry ingredients for the biscuits; flour, sugar, kosher salt and mix well. In a small bowl combine milk, olive oil, parsley and chives; then, stir into dry ingredients until just combined. Don't over mix. Dough should be sticky.

5. Transfer chicken and vegetable filling to a greased 3 quart baking dish. Drop biscuit batter, one heaping large tablespoonful at a time onto the filling.

6. Bake uncovered at 375° F for 30-40 minutes or until biscuits are lightly browned.
