• 2 Tbsp Olive oil
  • 4 Shallots, thinly sliced
  • 1 lb frozen corn
  • 1/2 tsp salt
  • 1/4 tsp sugar
  • 1/4 tsp ground paprika
  • 2 Tbsp fresh flat leaf parsley, chopped
  • (Optional: bacon, cooked and chopped)


Heat olive oil in a pan over medium-high heat.

Add shallots and cook for about 30 seconds.

Add corn, salt, sugar, and paprika, and cook for about 8 to 10 minutes, stirring occasionally.

Take off heat and stir in chopped parsley. (If using, add bacon bits.)
