• 4 tilapia fillets (6 oz each)
  • 1 cup roasted and salted whole pistachios (removed from shell)
  • Salt and pepper
  • 2 Tbsp olive oil


In a food processor, grind the pistachios until very fine.

Rinse the fish and pat dry with a paper towel.

Season both sides of the fish with salt and pepper.

Coat both sides of the fish fillets in the ground pistachios.

Heat the olive oil in a large skillet over medium heat.

Add the fish and cook for 2 to 3 minutes on each side, depending on desired doneness.
