Makes 8 servings, 1/2 sandwich each

Ingredients

  • 1/2 cup fat-free ricotta cheese
  • 1/4 cup shredded part-skim mozzarella cheese
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 8 slices Italian bread
  • 3 oz. turkey pepperoni (about 48 pieces)
  • cooking spray
  • 1/2 cup marinara sauce, warmed

Directions


In a small bowl, combine ricotta cheese, mozzarella cheese, oregano and garlic until well mixed.

Spread mixture onto 4 pieces of bread. Top each of those with turkey pepperoni (about 12 pieces on each) and an additional piece of bread.

Lightly spray a large skillet with cooking spray and place over medium-high heat. Add 2 sandwiches to the skillet and allow the bread to brown, pressing down occasionally, for about 2 minutes. Flip allow the other side to brown as well. Remove from skillet and repeat with the other 2 sandwiches.

Cut each sandwich in half and serve with warm marinara sauce.

Nacho Grilled Cheese: Mix salsa and refried beans, spread on bread and top with chopped fresh jalapenos, chopped olives and thinly sliced cheddar cheese.

Spinach and Artichoke Dip Grilled Cheese: Mix spinach (sautéed with garlic), artichokes hearts, a small amount of fat-free sour cream and layer with thin sliced part skim mozzarella.
