Easy Roasted Shrimp Salad

Ingredients
3 pounds of fresh shrimp, peeled and deveined
2 tablespoons of extra virgin olive oil
Kosher salt
Ground black pepper
1/2 cup of mayonnaise
1 orange, juice plus zest
1 tablespoon of rice wine vinegar
2 tablespoons of fresh dill, plus more for garnish
1 cup of cucumbers, deseeded and diced
1 cup of red bell pepper, diced
Instructions
Preheat oven to 400°
Toss the shrimp with the olive oil and 5-finger pinches of salt and ground black pepper.
Spread the shrimp in a single layer onto a baking sheet and roast for 5-7 minutes, just until firm and cooked through. Do not overcook. Allow to cool slightly before mixing with other ingredients.
In a large bowl, whisk together the mayonnaise, orange juice, orange zest, rice wine vinegar and dill. Toss with the cucumbers, red bell peppers and shrimp.
Chill until ready to serve and enjoy.
