Take this hearty dish on the go or serve as an entree at parties.
12 ounces package lasagna noodles
2 cups ricotta cheese
1 cup shredded mozzarella
1/2 cup shredded jack cheese (mixed w/ mozzarella)
3/4 cup shredded parmesan
1/2 yellow onion, diced
1 pound ground Italian seasoned turkey meat or sausage
3 cups marinara sauce
1 cup diced tomatoes
1 tablespoon olive oil
6 wide mouth mason jars
Salt and pepper to taste
Preheat oven to 350°.
Boil pasta according to package directions. Drain the water and return the cooked pasta to the pot.
In a large sauté pan, sauté chopped onions with olive oil and lightly season with salt and pepper until onions become fragrant.
Mix in ground turkey meat with onions and cook until the turkey meat is just browned.
Mix the marinara sauce and diced tomatoes along with the cooked pasta in with the cooked turkey meat and bring to simmer.
In a medium-size mixing bowl, combine the ricotta cheese, mozzarella and jack cheese, and eggs. Mix thoroughly.
In the mason jars, layer the tomatoes, turkey, and noodle mixture with the cheese mix until the jar is full.
Top with an extra spoonful of sauce and a sprinkle of Parmesan.
Bake uncovered for 20 minutes (or until bubbly).
Remove the jar from oven and allow it to cool for 5 minutes. Serve warm.
