Jollof Dry Spice Mix Recipe
This flavorful combination of spices is restaurateur Zoe Adjonyoh's secret weapon.

Makes 1 3/4 cups
Ingredients
5 Tbsp. ground ginger
3 1/2 Tbsp. garlic powder
6 Tbsp. dried chili flakes
1/4 cup dried thyme
1/4 cup ground cinnamon
2 Tbsp. ground nutmeg
2 1/2 Tbsp. ground coriander
1/4 tsp. kosher salt
1/4 tsp. ground black pepper
1 tsp. dried ground prawn/shrimp or crayfish powder (optional)
Directions
Mix all ingredients together in a bowl. Store in an airtight container in a cool, dark place and use within a few months.
