Outside (mix in a small bowl up to 1 week in advance):2 Tbsp. paprika
1 Tbsp. oregano
1 Tbsp. garlic powder
1 Tbsp. onion powder
1 Tbsp. dried thyme
2 tsp. kosher salt
2 tsp. cayenne pepper
Inside:
1 green bell pepper, seeded and quartered
1 jalapeño, seeded and quartered
1 celery stalk, sliced
2 garlic cloves, crushed
Mediterranean
Outside (Mix in food processor):
½ cup Italian parsley
3 Tbsp. olive oil
1 Tbsp. lemon zest
1 Tbsp. rosemary
2 tsp. dried oregano
1 tsp. kosher salt
1 tsp. black pepper
⅓ tsp. red pepper flakes
Inside: 1 red onion, quartered
