These are easy to make and are put together with ingredients that are usually on hand: eggs, sandwich spread or mayonnaise, mustard and a little salt and pepper.
Makes 12
6 hard-boiled eggs
3 Tbsp. sandwich spread or mayonnaise
1 Tbsp. prepared mustard
1/2 tsp. sugar
Salt and pepper
1⁄4 cup minced sautéed chicken livers, minced cooked shrimp or finely crumbled crispy bacon (optional)
Paprika for garnish
Minced fresh cilantro for garnish
Slice the eggs lengthwise and gently scoop the yolks out into a medium bowl. Mash the yolks well with a fork.
Add the sandwich spread, mustard, and sugar and mix well. Season with salt and pepper. Stir in the chicken livers, shrimp, or bacon, if using.
Using a teaspoon, spoon the yolk mixture back into the egg white halves. Arrange on a platter and sprinkle with paprika and cilantro, if using.
