Crackling yet moist, sweet yet salty, the only thing kouign amann doesn't have going for it is an easy-to-say name (koo-ween ah-mahn). Celtic for "butter cake," kouign amann is a Breton pastry similar to the croissant but folds in more butter, sugar, and salt.
