Paint your chicken with this flavorful sauce by Cree LeFavour, author of the chicken-centric cookbook Poulet.

Makes ½ cup, enough for 6 to 8 grilled chicken breasts or thighs


  • ¼ cup unsweetened peanut butter
  • 2 Tbsp. peanut oil
  • 1 Tbsp. crushed red pepper flakes
  • 2 Tbsp. soy sauce
  • 2 tsp. Sichuan peppercorns, finely crushed (optional)
  • 1 serrano chile, stemmed, seeded, and finely chopped
  • 6 scallions, trimmed and thinly sliced


Total time: 5 minutes

In a small bowl, stir together peanut butter, oil, pepper flakes, soy sauce, peppercorns (if using), and chile until well combined. Brush onto grilled chicken as it comes off the grill, and scatter scallions over the top.
