Slow-Cooker Caramelized-Onion Dip Recipe

Serves 8
3 large onions, thinly sliced
2 Tbsp. unsalted butter, melted
1/2 tsp. salt
8 oz. cream cheese, softened
8 oz. sour cream
2 Tbsp. chopped fresh parsley
Salt and pepper, to taste
Potato chips, for serving
Directions
Combine the onions, butter and salt in a slow cooker, put the lid on and cook on low for 8 hours, until onions are soft and golden brown and taste sweet.
Transfer caramelized onions to a cutting board using a slotted spoon (discard juices) and roughly chop. In a large mixing bowl, combine onions, cream cheese, sour cream and parsley. Stir well and season with salt and pepper to taste. Serve immediately with chips, or refrigerate until ready to serve.
