No-Bake Grasshopper Pie Recipe
This fluffy, minty, retro take on the classic grasshopper cocktail—from Kate McDermott’s Art of the Pie—requires no baking. And since the filling’s made with only five ingredients (heaped into a chocolate cookie crust), this treat proves it’s so easy being green.
Makes 1 (9-inch) pie
Ingredients
24 marshmallows
2/3 cup half-and-half
2 Tbsp. crème de cacao
2 Tbsp. crème de menthe
1/2 pint whipping cream
1 premade chocolate cookie pie crust
4 Tbsp. cream
1 tsp. finely ground chocolate cookie crumbs
Mint leaves, for garnish

Total time: 1 hour, 20 Minutes
Melt marshmallows in half-and-half in a double boiler. Remove mixture from heat and let cool. Fold in crème de cacao and crème de menthe. Whip whipping cream and mix into filling; pour entire mixture into pie crust. Refrigerate for at least 1 hour. To serve, whip cream and spread over top of pie. Sprinkle cookie crumbs evenly over whipped cream and garnish with mint leaves.
