Serves 1


  • 1/4 cup flour
  • 1 Tbsp. brown sugar
  • 1/4 tsp. baking powder
  • 1/8 tsp. salt
  • 1/8 tsp. ground cardamom
  • 1/2 Tbsp. butter
  • 2 Tbsp. milk
  • 1 1/2 tsp. mango-peach preserves
  • 1 Tbsp. shredded coconut


    Stir flour, brown sugar, baking powder, salt and cardamom together in a mason jar. Stir in flour, breaking it up as you stir so the mixture turns crumbly. Stir in milk. Spoon preserves on top of the batter, spreading slightly, so the preserves cover most of the surface. Microwave for 90 seconds and use a pot holder to remove the jar from the microwave. Let cool somewhat, then sprinkle coconut on top and serve (or replace the lid and eat later).
