Hot Cocoa Amaranth Recipe

Despite its name, this breakfast is a cereal, not a drink.
Serves 4
Ingredients
- 1½ cups amaranth
- 2½ cups water
- 1 cup skim or soy milk
- 3 Tbsp. brown sugar
- 1 Tbsp. unsweetened cocoa powder
- ¼ tsp. cinnamon
- ¼ tsp. salt
- 2 Tbsp. shredded sweetened coconut
Directions
In a medium saucepan, bring the amaranth, water, skim or soy milk, brown sugar, unsweetened cocoa powder, cinnamon and salt to a boil. Reduce heat to low, cover and simmer, stirring frequently, until the liquid is absorbed, about 30 minutes. Top each bowl with shredded sweetened coconut.
