Serves 8


  • 1 pound raw unsalted nuts (almonds, hazelnuts, pecans, or a mix)
  • 1⁄3 cup honey
  • 1 tsp. coarse salt
  • 1 Tbsp. vegetable oil
  • ½ tsp. vanilla extract
  • 2 tsp. ground ginger
  • ½ tsp. garlic powder

    Total time: 40 minutes

    Preheat oven to 350°. On a rimmed baking sheet, scatter nuts. Bake 10 minutes, stirring halfway through.

    In a large heatproof bowl, toss nuts with honey. Add salt and stir. Line a separate baking sheet with parchment paper. Using your hands, grease paper with oil. Pour nuts onto paper and stir to coat with oil.

    Allow nuts to cool, stirring 2 or 3 times in the first 20 minutes. Add vanilla, ginger and garlic powder; stir; and allow to cool completely.
