Frozen Tropical Fruit Martinis
Perfect for a summer evening, or any time you want to start things off with a spark!
Servings: Makes 8 martinis
Ingredients
Directions
Combine vodka and mango juice in baking pan. Drain syrup from lychees and pour into another baking pan. Cover both pans with lid, foil, or plastic wrap. Freeze mixtures an hour or two, until frozen around edge.
Remove containers from freezer and scrape ice with fork, mixing it from edge into center. Repeat the scraping and mixing process for another hour or so until mixtures have a nice slushy consistency.
When you're ready to serve the drinks, combine half the frozen vodka mixture, half the frozen lychee mixture, and 4 ice cubes in a blender. Puree until smooth and thick. Pour into four martini glasses garnished with mango and lychees on skewers. Repeat.
Recommended ingredient: Lychees (also known as litchis) are a fruit cultivated in subtropical regions, known for its creamy white flesh that's juicy, smooth and delicately sweet.
