A New Way to Enjoy Potatoes in the Morning
Sweet potatoes are a delicious and versatile—yet often overlooked—breakfast food. They can stand in for toast when sliced thin, or, as this fun recipe from Frugal Vegan suggests, microwave them until cooked through, cut them in half lengthwise, and create little pockets in their flesh with two forks, which you can fill with all manner of toppings. Mashed avocado spiked with cumin and cayenne; along with black beans, corn and salsa make for a healthy, Southwestern spin, though you can also try anything from chickpeas to broccoli to bell pepper and spinach.
