Makes 24 marshmallows


  • 24 marshmallows
  • 6 ounces milk chocolate chips
  • 6 ounces dark chocolate chips
  • 2 cups brown sugar
  • 1 1/4 cups cocoa powder
  • 1 tsp. fine salt
  • 1 1/2 Tbsp. cornstarch
  • Pinch of cayenne pepper (optional)
  • 1/2 cup sprinkles
  • 16 ounces semisweet chocolate chips


    Skewer marshmallows with paper party straws. In a food processor, chop milk chocolate chips and dark chocolate chips; transfer to a bowl and add brown sugar, cocoa powder, salt, cornstarch and a pinch of cayenne pepper, if using.

    In a separate bowl, place sprinkles. In a saucepan topped with a heatproof bowl (or in a double boiler), bring water to a boil. Place semisweet chocolate chips in bowl and stir until melted. Remove bowl from heat. Dip marshmallows in melted chocolate, then cocoa mix, then sprinkles. Place on parchment paper to cool, then serve or wrap.
