Photo: Christal Sczebel
Makes 30 balls
1 cup almonds
1 cup chocolate vegan protein powder
1 cup rolled oats
3 Tbsp. natural cocoa powder, plus 2 Tbsp.
1 cup pitted dates
3 Tbsp. unsweetened almond milk
Directions
In a food processor, combine the almonds, protein powder, oats and 3 tablespoons of the cocoa powder and process for 30 seconds.
Add the dates and continue to process while you slowly pour in the almond milk until the mixture starts to clump together, 1 to 2 minutes.
Line a baking sheet with parchment paper. Using a tablespoon measure, scoop out the mixture and, with clean wet hands, roll into a ball between your palms. Place on the prepared baking sheet. Repeat with the remaining mixture until you have 30 balls.
Sprinkle the balls with the remaining 2 tablespoons of cocoa powder and roll until they are all lightly coated.
Place the balls in the freezer for 30 minutes to set. Store in the refrigerator, or at room temperature, until required.
