Cheesesteak Pita Wraps with Pimento Cheese Recipe
1 1/2 cups shredded sharp cheddar
1 chopped jarred hot cherry pepper
3 Tbsp. mayonnaise
1/2 tsp. paprika
1 1/4 pounds flank steak
1 tsp. salt
1/2 black pepper
4 (7") pitas
1 cup coarsely chopped romaine
1/4 diced avocado
In a medium bowl, mix together shredded sharp cheddar, hot cherry pepper, mayonnaise, and paprika. Preheat grill on high heat.
Drizzle flank steak with olive oil, coat well, and season with salt and black pepper. Grill until nicely charred and medium rare, 4 minutes per side. Transfer to a carving board, let rest 5 minutes, then slice thinly against the grain.
Warm pitas on the grill until just pliable, 30 seconds. Spread pitas with cheese mixture and top each with romaine, avocado and sliced steak.
