I live in California, and there are so many people I know here who are vegetarians, including Amy, one of my best friends, and my stepson Denis, who is a cartoonist and environmentalist. Every time I have a dinner party, Amy and her husband, Andy, are always present, and there's usually at least one more person who's a vegetarian. I always prepare separate dishes to include something they will be able to eat that's just as delicious as the food I'm serving to all of us carnivores!

I've gotten quite good at it since my stepson Denis is over the house quite often, as are our friends Amy and Andy. We share many evenings just hanging around, having dinner together and watching movies. Whenever we go to Amy and Andy's home, Amy always makes these incredible vegetarian dishes that are so delicious I actually say to myself, "I could do this; I could be a vegetarian." I've tried to be a vegetarian, believe me—I could do it too if I just didn't love cheeseburgers so much!

When I stop to think about it, most of the time we really don't eat that much meat at all. Our main diet in our home is mainly salads, vegetables and pastas.

I love vegetarian cookbooks, and I have quite a few of them in my collection. I would like to recommend three cookbooks that I keep using time and time again because I simply love the recipes and the huge variety of delicious vegetarian meals they offer. I've used these cookbooks to serve a totally vegetarian dinner to my family and also for dinner parties. No one misses the meat at all.

  • Veganomicon by Isa Chandra Moskowitz and Terry Hope Romero
  • A Year in a Vegetarian Kitchen by Jack Bishop
  • Golden Door Cooks at Home by chef Dean Rucker. This cookbook is from the world-renowned Golden Door health spa and does contain some meat recipes; however, the soups, salads, vegetable dishes and desserts are outstanding.
Speaking of outstanding, I have a vegetarian recipe for Fresh Roma Tomato Sauce that you can also eat as a soup. Two for one! Enjoy.
