Spicy Salmon with Spicy Salsa
Spice up your salmon with this recipe created by the women of the 20 Years Younger Challenge with the help of fitness expert Bob Greene.
Servings: Serves 4
Ingredients
Salmon
- 4 salmon fillets
- 1 Tbsp. fresh orange juice
- 1 Tbsp. fresh lime juice
- 1 Tbsp. extra-virgin olive oil
Spicy Salsa
- 1 red tomato
- 1 Tbsp. (3 cloves) chopped garlic
- 1 bunch fresh cilantro
- 1/2 avocado , sliced
- Pinch of salt
Directions
To make salmon: Prep salmon fillet with the juice of half an orange and half a lime. Slice the other half for garnish.
Place salmon in a hot pan with extra-virgin olive oil.
Cook until golden on each side.
To make spicy salsa: Finely chop ingredients and mix together. Make with 2 minutes left before serving. Add salt.
To serve: Top salmon with spicy salsa and sliced avocado; serve immediately.
