Preheat oven to 350°. Position racks in the top and bottom thirds. Lightly oil 2 baking sheets. In a large bowl, using an electric hand mixer, beat together raw sugar, unpacked dark brown sugar, mashed avocado, unsweetened applesauce, egg white and vanilla extract until sugar dissolves.

In another bowl, whisk white whole wheat flour, all-purpose flour, unsweetened cocoa powder, baking soda and salt. Fold the dry ingredients into the wet in two batches until batter is well mixed. Fold in chocolate chunks and walnuts. (Dough will be very sticky.) Cover bowl with plastic wrap and refrigerate 15 minutes. Drop tablespoons of dough 1" apart onto prepared baking sheets. Bake until almost set, 10 to 12 minutes. Let cool 5 minutes; transfer to wire racks to cool completely.
