Mushroom, Turkey and Potato Pie Recipe

This classic comfort food uses leftover turkey, string beans and mashed potatoes from Thanksgiving dinner. And the best part? It only takes 30 minutes to make.
Serves 4
Ingredients
- 1 Tbsp. vegetable oil
- 1 1/2 cups mushrooms
- 1 small onion
- 1/4 cup dry sherry
- 2 cups roast turkey
- 1 cup string beans
- 1 Tbsp. soy sauce
- 1 Tbsp. water
- 2/3 cup heavy cream
- 2 tsp. fresh sage
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 cups mashed potatoes
- 1 Tbsp. cream
Directions
Total time: 30 minutesIn a large skillet, heat vegetable oil over medium heat. Add sliced mushrooms and season with salt; cook, covered, until tender, 4 minutes. Add the onion, chopped, and cook until soft, about 3 minutes. Add dry sherry and reduce by half, 1 minute. Add diced roast turkey, diced cooked string beans, soy sauce, water, heavy cream, fresh sage and 1/4 tsp. each salt and pepper; simmer 2 minutes.
Transfer to a baking dish, spread 2 cups mashed potatoes on top, and drizzle with cream. Broil in middle of oven until bubbling, 5 minutes.
