This tasty recipe from Martita Jara, Chef on Home Made Simple, is the perfect way to incorporate french toast into your brunch that no one will believe does not have eggs, dairy or gluten. Add the decadent finish of the chocolate peanut butter sauce and sweetened fresh strawberries and you’ll have a dish your friends will be talking about for brunches to come.
Serves 4

Chocolate Sauce Ingredients

    ½ cup almond milk
    ¼ cup natural peanut butter
    ½ cup vegan chocolate chips
    1 tsp. pure vanilla
    ¼ tsp. ground cinnamon

Place all ingredients in the top of a double boiler over medium heat and stir until melted and well combined. Set aside to cool.

Fresh Strawberry Syrup Ingredients

    2 cup sliced strawberries
    ½ cup light agave nectar
    ¼ tsp. ground cayenne pepper

Place all ingredients in bowl, stir to combine and allow ingredients to sit together 15 minutes.

French Toast Ingredients

    ¾ cup almond milk
    2 bananas
    2 tsp. pure vanilla
    ½ tsp. ground cinnamon
    8 slices vegan bread
    4 tbsp. vegetable oil

Place a large skillet over medium high heat, add a couple of tbsp. of oil to pan to heat.

In a blender, combine almond milk, bananas, vanilla and cinnamon, then pour mixture into a shallow bowl. Coat a couple of slices of bread in the batter. Brown batter dipped bread in for a couple of minutes per side. Continue steps until all bread is cooked.

To serve place a slice on toast on plate, drizzle with chocolate sauce, top with another slice, drizzle with more chocolate sauce, top with strawberries in syrup and enjoy!
