Vegan Veggie Shrimp Cocktail

Ingredients:
Serves 12
- 2 pounds vegetarian shrimp

3 cloves finely chopped garlic

1 lime

3 Tbsp. olive oil
Cocktail sauce
- 2 Roma tomatoes cut into 1/2 inch cubes

2 cloves minced garlic
-
1/2 large cucumber cut into 1/2 inch cubes

8 thinly sliced green onions
-
1 ounce finely chopped fresh cilantro
-
1 thinly sliced serrano pepper
-
1 avocado diced small
-
8 ounces V-8 vegetable juice
-
2 Tbsp. white vinegar
-
1 lime
-
1/2 tsp. salt
Sauté vegetarian shrimp with garlic, olive oil and lime. Set aside in refrigerator overnight. In a large bowl, combine all cocktail sauce ingredients. Serve sauce with marinated vegetarian shrimp.
