Roasted Broccoli with Balsamic Vinegar

Roasting broccoli at a high temperature results in a delicious side dish of one of
the healthiest foods in existence. Broccoli is available throughout the year, but if you get
a chance, get it in season from your local farmers' market.
Ingredients:
Serves 4
- 1 head broccoli , broken into approximately 1-inch florets

Vegetable oil cooking spray

4 cloves garlic , roasted

1/8 tsp. salt

2 Tbsp. balsamic vinegar
Heat the oven to broil.
Coat the broccoli with cooking spray and place on a sheet pan. Cook in the oven for 4 minutes, stirring after 2 minutes. Toss the broccoli with the garlic, salt and balsamic vinegar. Serve.
