Ingredients 1 loaf olive bread, cut into 8 slices1/4 cup olive oil4 tsp. Dijon mustard4 tsp. mayonnaise4 slices Muenster cheese8 thin slices roasted turkey breastGrilled vegetables of your choiceKosher salt, to tasteCracked black pepper, to taste8 fresh basil leaves (optional)
Preheat your panini machine on high heat or your griddle or pan on low-medium heat for 5 minutes.
Brush the bread on both sides with olive oil. For each panini sandwich, spread the inside of the first slice of bread with 1 teaspoon of mustard and the other slice with 1 teaspoon of mayonnaise. Top the first slice of bread with a slice of cheese, 2 slices of turkey, grilled veggies, salt and pepper to taste and 2 basil leaves. Finish the sandwich with the second slice of bread. Place the sandwich in the heated panini machine and grill for 4 to 5 minutes until the cheese is completely melted and the bread is toasted.
Remove the panini sandwich and place it on a cutting board. Use a serrated knife to cut it in half.
