Lemon-Thyme Martini

Lemon-Thyme Martini

Ingredients

Lemon-Thyme Martini

  • 1 cup ice
  • 1/3 cup lemoncello
  • 1/2 cup lemon-flavored vodka
  • 1/4 cup simple syrup
  • 2 sprigs thyme

Garnish

  • 2 lemon wedges
  • Purple sugar

Simple Syrup

  • 2 cups sugar
  • 1 Tbsp. lemon zest
  • 2 cups water

Directions

For the simple syrup: Combine 2 cups sugar, lemon zest, and 2 cups water in a heavy-bottom saucepan over very gentle heat. Cook until sugar has completely dissolved, stirring until the mixture is clear. Set aside or pour into jar to cool. You can keep the extra simple syrup in a closed container in your refrigerator.

For the Martini: Place ice in a martini shaker. Add lemoncello, lemon flavored vodka, sprigs of thyme, and 1/4 cup of the simple syrup. Shake vigorously.

Moisten the rims of your martini glasses with a lemon wedge and coat the rims with purple sugar. Strain lemon-thyme mixture into martini glasses. Garnish each glass with a spring of fresh thyme and serve.
