Art, Oprah's personal chef for 10 years and the creator of Table Fifty-Two, decided to give fried chicken a makeover after being diagnosed with diabetes just before his 50th birthday.

By using Greek yogurt instead of buttermilk to coat the chicken, Art reduced the amount of fat and increased the amount of protein in his signature dish. "The fact is you've got to get rid of the skin, and you've got to use a multigrain type of coating because it's all in the crust where the fat is," Art said.
