Ingredients

  • 1 Tbsp. balsamic vinegar
  • 1 Tbsp. finely grated lemon zest
  • 2 Tbsp. lemon juice
  • 1 tsp. tomato paste
  • ¼ cup extra-virgin olive oil
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 1 (6-ounce) head Boston or butter lettuce, torn into bite-size pieces
  • 1 cup mint leaves
  • ½ cup basil leaves
  • 12 strawberries (about ¾ pound), halved
  • ½ cup toasted, chopped pecans
  • ¼ cup crumbled feta

    Directions

    Total time: 20 minutes

    In a small bowl, combine balsamic vinegar, lemon zest, lemon juice and tomato paste. Stir in olive oil, salt and pepper. In a large bowl, toss lettuce, mint leaves, basil leaves, strawberries, pecans and feta. Pour dressing over salad, toss well and serve.
