Ingredients:

Serves 6-8
  • 8 cups day old bread cut in 1 inch pieces (Italian, French, Brioche & Challah are my faves)
  • 1 cup fresh baby spinach, chopped
  • 8 sliced crimini mushrooms
  • 1/2 cup of chopped sun dried tomatoes
  • 9 eggs
  • 1 1/2 cups shredded Gruyere cheese
  • 2 ounces finely grated parmesan (1 cup)
  • 3 cups milk
  • 2 teaspoons dijon mustard
  • 1/4 tsp of Fresh Nutmeg
  • 1 tsp salt
  • 1 tsp freshly ground pepper


Directions:
  • Beat together eggs and milk with a whisk. Add mustard, salt, pepper & nutmeg, whisk together
  • Put bread in a buttered 9 x 13 baking dish
  • Add mushrooms, spinach, cheese & sun dried tomatoes over bread
  • Pour the egg mixture over the bread mixture, covering it
  • Sprinkle Parmesan on top
  • Cover and refrigerate overnight
  • Preheat oven, 350 degrees
  • Bake for 30-40 minutes until egg is set and edges are brown
