What if you could cure a debilitating disease simply by changing your diet? For Kendall Conrad, author of Eat Well, Feel Well, a change in diet may have saved her young daughter's life. Bob talks with Kendall about her daughter's struggle with Crohn's disease and the diet plan that restored her health.

Kendall says when her daughter was born she suffered from recurring ear infections. Doctors prescribed antibiotics, which took care of the infections but wreaked havoc on her stomach. Unable to absorb nutrients and properly process her food, Kendall's daughter's health grew progressively worse.

In her search for a cure, Kendall says she discovered the Specific Carbohydrate Diet (SCD), a plan created by nutritionist Elaine Gottschall that calls for the elimination of complex sugars—polysaccharides and disaccharides—from the diet. "By removing the food that feeds the bad bacteria, you then starve them to death and return balance to your gut," Kendall says.

The very day after her daughter began the diet, Kendall says her health began to improve. After three years of strictly following the diet, Kendall says her daughter was completely healed. In fact, Kendall says that because her daughter was cured at an early age, she can now eat any food she likes…although she says she prefers eating healthy, organic foods such as the ones she enjoyed on the SCD diet. "She has a very sophisticated palette," Kendall says.

Kendall says many people suffering from Crohn's disease, ulcerative colitis, celiac disease, diverticulitis and other digestive conditions can completely restore their health, too, simply by cutting out the following foods from their diets:

Restricted foods:
  • No milk or milk products
  • No soy products
  • No grains (rice, wheat, flour, pasta, crackers, bread)
  • No starches (potatoes)
  • No agave
  • No maple syrup
  • No candy, soda, etc.

Sugars you can eat:
  • Monosaccharides (honey)
  • Real, natural fruit (Kendall says she often used dates in baking)

Foods you can slowly try after symptoms have improved:
  • Quinoa
  • Spelt
