The Gut-Balancer You Can Eat as a Chip
Sunchokes, those homely little tubers that taste like artichoke-flavored potatoes, are a surprisingly good source of prebiotics. "They aid digestion by supporting a healthy bacterial balance in the gut," McDonald explains. Note that while eating them usually gets things moving, some people find that the inulin fiber in sunchokes works a little too well, and that's earned the tubers a less-than-flattering nickname among the British. If you're already sensitive to fruit like apples, McDonald suggests eating sunchokes sliced and baked as chips (not raw).
