Buster's Favorite Recipes
These recipes are from Buster Douglas' book, Buster's Backyard Bar-B-Q
Bar-B-Q Sauce for Diabetics 4 tbsp lemon juice Dash of red pepper flakes 2 tbsp cider vinegar 1 cup low-calorie catsup ½ cup water 3 tbsp Worcestershire sauce Dash of lemon pepper 1 ½ tsp. mustard Non-nutritive sweetener equal to ½ sugar ½ tsp salt Mix all ingredients together in a bowl. Lightly brush sauce onto your meat. Basil Pork or Lamb Chops 4 lean center-cut Pork or Lamb chops (1 ¼ pounds) 1 cup V-8 juice 1 tsp dried basil ½ tsp salt 1 tsp coarsely ground pepper Trim and discard excess fat from chops. In a large frying pan brown chops without added fat. When chops are browned add other ingredients. Cover tightly and simmer 40 minutes or until tender. Turn meat occasionally and add a few tablespoons of water if necessary to prevent burning.
