I Have Some Oven Questions

Dear Art:
I have a few questions regarding ovens:
Does the rack positioning make a difference in the speed or way in which the food cooks?
Does food cook faster or slower when wrapped?
Do you need to keep the oven cracked open when you use the broiler? My mom always used to do that.

To answer your questions about the oven, Yes, Yes, and Yes!
The position of the rack will affect your baking, but don't forget to turn the food in the oven for even baking.
Some wrapped foods will cook faster or better if covered by foil, but some foods will steam in the foil and you will lose that crisp crust.
The broiler door was kept open most times so cooks could keep an eye on the food, and make sure it wasn't burning. It's okay to keep it closed, but make sure to check food often.

To be a good cook, it's really important to know your oven or stove. I find that many people are just not that well-acquainted with this appliance. All homes have ovens and stoves of different personalities. Regardless of the price tag, all ovens have their issues. Some bake better than others, some have better heating elements, and so on. It's good to learn your stove's idiosyncrasies, or it may yield something that's less than desirable.

For the best results, keep your oven spotless and well-maintained. If you buy a new oven, or still have the instruction booklet from your current oven, read it really well. I have searched all over the kitchen for mine when I have oven problems!
