How to Invert a Cake It's scary to invert a cake, especially after all the effort you've made to measure, mix, and bake. Here's a never-fail way to make sure the cake doesn't stick to the pan even when gooey caramelized fruit is on the bottom. The trick is to place something between the cake and the pan that doesn't adhere to either. Parchment paper is ideal. For a perfect fit, place the pan on the paper and, with a pencil, trace the circumference of the pan's bottom. Cut the paper and make sure it fits inside—if the paper bunches, the cake will end up with creases.
