Dear Art: Recently I came across a cooking term that I wasn't familiar with. How do you "sweat" vegetables? Response: "Sweating" vegetables is a useful technique that yields great results. Place chopped vegetables in a sauté pan with a little butter or fat and simmer lightly. You will notice the vegetables begin to release moisture—this is called "sweating." When the vegetables release this moisture, it adds flavor to your dish. In low-fat cooking, this technique is a sure way to give food a great depth of flavor, especially soups and sauces.
