Response: Tofu, a soybean curd that has its origins in the Orient, is sold in a variety of forms. It can be vacuum-packed, or packaged in water to keep it fresh. You can buy tofu soft or firm, and with many flavors and marinades as well. It's all great! The type of tofu you use depends on what your recipe calls for. I use soft tofu for salad dressings or in place of ricotta cheese. It's also great for making cheesecake. Firm tofu holds its shape well, and is perfect for stir-frying. I also like it grilled, for snacking or on top of salads.
