Dear Art: Would you please tell me what superfine sugar is? Can granulated sugar be substituted when superfine sugar is called for in a recipe? Response: Superfine sugar is simply sugar that has been ground more finely. Recipes that call for the sugar to melt quickly or for meringue usually require superfine sugar. You can easily make superfine sugar yourself by placing regular white sugar in a food processor or blender. (Darker sugars tend to be moister, and most recipes require dry sugar to stop crystallization.) As for substitutions, if the recipe calls for superfine sugar, I recommend using it. Baking is very tricky, and it's important to follow the recipes closely. It takes too much work and too much of our precious time to make a bad judgement.
