Chef Joe Dobias of JoeDoe and the recently opened JoeDough Sandwich Shop in New York City's East Village uses turmeric to make his Yellow Horseradish. Turmeric is Dobias' most-used spice after salt. Dobias serves the horseradish on his Lower East Side French Dip with griddled tongue and au jus.


Makes 1 cup

Ingredients

  • 2 horseradish roots
  • 1/2 cup rice vinegar
  • 1/2 cup white vinegar
  • 1 Tbsp. turmeric

Directions


Peel and chop the horseradish into smaller pieces.

Place the pieces in a food processor along with the vinegars and the turmeric.

Puree until the mixture is finely chopped.
