White Beans with Rosemary, Chopped Tomatoes and Olive Oil

Serve alone or with celery slices and carrot sticks for an appetizer that will impress!

Servings: Makes 4 servings
Ingredients
  • 2 tablespoons extra-virgin olive oil
  • 15 ounces white beans (one can drained and rinsed)
  • 2 teaspoons chopped fresh rosemary
  • 1 plum tomato (seeded and finely chopped)
  • 1/2 teaspoon salt
Directions
In a medium bowl, combine 15 ounces white beans (1 can drained and rinsed), 2 teaspoons chopped fresh rosemary, 1 plum tomato (seeded and finely chopped), 2 tablespoons extra-virgin olive oil, and a 1/2 teaspoon salt.
