Ingredients
  • 2 pounds vegetarian shrimp
  • 3 cloves finely chopped garlic
  • 1 lime
  • 3 Tbsp. olive oil
  • Cocktail sauce
    • 2 Roma tomatoes cut into 1/2 inch cubes
    • 2 cloves minced garlic
    • 1/2 large cucumber cut into 1/2 inch cubes
    • 8 thinly sliced green onions
    • 1 ounce finely chopped fresh cilantro
    • 1 thinly sliced serrano pepper
    • 1 avocado diced small
    • 8 ounces V-8 vegetable juice
    • 2 Tbsp. white vinegar
    • 1 lime
    • 1/2 tsp. salt
    Directions
    Sauté vegetarian shrimp with garlic, olive oil and lime. Set aside in refrigerator overnight. In a large bowl, combine all cocktail sauce ingredients. Serve sauce with marinated vegetarian shrimp.
