  • 3/4 cup diced onion
  • 1 Tbsp. vegan margarine or vegan butter
  • 1 1/2 pounds finely chopped vegan chicken roll
  • 30 Tbsp. vegan mayonnaise
  • 3 1/2 ounces egg substitute
  • 3 1/2 cups plain medium bread crumbs
  • 2 Tbsp. chopped fresh Italian parsley
  • 4 tsp. fresh lemon juice
  • 1/2 tsp. ground paprika
  • 1/8 tsp. garlic powder
  • 1 Tbsp. veggie chicken seasoning
  • 2/3 cup all-purpose flour
  • Directions
    In suitable pan, sauté onions in margarine until transparent and tender. Do not brown. Place veggie chicken in suitable mixing bowl. Using a paddle, mix veggie chicken to a paste. Add all other ingredients except 1 cup of bread crumbs. Mix thoroughly until all ingredients are well blended. Use a number 12 scoop to form into patties. Roll patties in remaining bread crumbs. Grill for approximately 3 minutes or until golden brown.
