Uncle Bennie's Country-Fried Perch

When Oprah went back home to visit her family, one of the meals she longed for was her Uncle Bennie's deep-fried fish.
Servings: Makes 6 servings
Ingredients
- 6 perch fillets
- French's regular mustard
- Yellow cornmeal
- Peanut oil
- Season-All seasoning
- Garlic powder
- Onion powder
- A little black pepper
- A little red pepper
Directions
In a bowl or shaker, pre-mix the seasonings. Wash fish and dry with a paper towel. Then lather the fish in mustard.
Shake pre-mixed seasoning on fish, or dredge the fish in the seasoning in a bowl. Roll fish in yellow cornmeal until completely covered. Shake the extra meal off the fish.
Pour peanut oil into a skillet or fryer and deep-fry the fish until crispy. Remove fish from the oil and drain on paper towels, then serve.
