- 1 carrot , grated
- 1/2 head green cabbage (about 1 pound), quartered, cored, and thinly sliced
- 1/2 head red cabbage (about 1 pound), quartered, cored, and thinly sliced
- 1 small red onion , very thinly sliced
- 1/2 cup chopped parsley
- 2 tsp. kosher salt
- 1/4 cup olice oil
- 2 Tbsp. red vine vinegar
- 1 Tbsp. celery seed
- 1 Tbsp. sugar
In a large colander, toss together carrot, cabbage, onion, parsley, and salt. Set colander over a large bowl and let sit 30 minutes; press firmly to remove moisture.
In a large bowl, whisk together oil, vinegar, celery seed, and sugar to combine, then add cabbage mixture and toss well to coat. Cover and chill at least 2 hours, then serve.
