Tricolor Coleslaw
Red and green cabbage and bright orange carrots make this side dish a festive, colorful addition to any buffet. It's one of O's tasty Super Bowl recipes.


Servings: Serves 8
Ingredients
  • 1 carrot , grated
  • 1/2 head green cabbage (about 1 pound), quartered, cored, and thinly sliced
  • 1/2 head red cabbage (about 1 pound), quartered, cored, and thinly sliced
  • 1 small red onion , very thinly sliced
  • 1/2 cup chopped parsley
  • 2 tsp. kosher salt
  • 1/4 cup olice oil
  • 2 Tbsp. red vine vinegar
  • 1 Tbsp. celery seed
  • 1 Tbsp. sugar
Directions
In a large colander, toss together carrot, cabbage, onion, parsley, and salt. Set colander over a large bowl and let sit 30 minutes; press firmly to remove moisture.

In a large bowl, whisk together oil, vinegar, celery seed, and sugar to combine, then add cabbage mixture and toss well to coat. Cover and chill at least 2 hours, then serve.
