These muffins are a delicious treat for breakfast or as a snack, and they're so simple, you can whip them up in a flash!
Servings: Makes 12 muffins
  • 2 1/3 cup flour
  • 1 cup buttermilk
  • 1/3 cup sugar
  • 1/4 cup applesauce
  • 2 tablespoons vegetable oil
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • Directions
    Preheat oven to 400° F. Combine all dry ingredients and mix thoroughly. Combine all liquid ingredients. Add the liquid ingredients to the dry and mix lightly until a batter forms. It will look lumpy, which is perfectly fine.

    Cover a muffin tin lightly with cooking oil spray. Use an ice cream scoop to fill the wells of the tin about 3/4 full. (Secret: Make sure the edges and unfilled portions of the muffin tin are clean. This helps the muffins rise up nice and high.)

    Pop in the oven and bake for about 20 minutes. Serve warm or cool.
